Your Jelly Rolls Will Look Upon You With Favor
No jelly rolls as of yet have graced this pan but if I baked any I am certain they would be well pleased. The fish stick's were quite happy so I am guessing the jelly rolls would be too.
Heating the pan to nearly 500 degrees (fish sticks like it hot 475) caused it to warp (momentarily startling my fish sticks) but it does return to its normal shape after removing from this infernal Hades like temperature. Please note that this is a temperature you would never wish to visit upon a non-stick pan. Over 400 degrees and non-stick becomes violently toxic spewing forth lecherous vapors that kill birds and you know what they say about canaries in coal mines. Always best to stay away from non-stick but I'm sure that's why your considering the pristine qualities of stainless to begin with. However the shiny surface is what attracted me (I like shiny things).
As a previous supporter of the noble qualities of this pan commented GOO gone works admirably at removing the barnacle laden adhesive from the surface (only two small spots on this pan).
I am now secretly abducting all of our rusting and peeling non-stick in favor of Norpro stainless shiny things. Shh my wife does not know as of yet but she will thank me. Muwhahahahaha.

No more burnt cookies
I've been burning cookie bottoms for so long in my cheap gas oven that I was hesitant to spend the money to buy these insulated cookie sheets. Turns out to be one of the best kitchen investments I've made. They really do what they claim. With the ventilated second layer it doesn't matter where on the sheet they are all the cookies have the same uniform browned bottom.

Wow! Heavy duty good quality.
I purchased this on the Friday sale for a real bargain price ($20) and that is quite deal.
This is the real stuff - heavy duty quality construction. I have used them with and without a silpat for baking cookies finishing satueed fish fillets oven roasting vegetables and many other purposes.
They are easy to clean and substantial. There do not seem to be any hot spots or other problems.
The only complaint I have and I make it with reservations is that they ARE heavy. Do not try to lift a loaded sheet out of the oven with one hand. The weight is also a good thing (see "substantial" above) but it easy to forget just how heavy it is going to be when you reach for that hot pad!

Solid built to last...highly recommend.
Sick of cheapie "cookie sheets" that buckle when you use them and only last a couple of years? Spend a little and get a pro 1/2 sheet pan. It's very sturdy and will probably last a home user a lifetime (heck they last years in commercial kitchens). Fits in standard home ovens.

High quality at a fair price
The dimensions of this cookie/jelly roll pan are 18" x 13" x 1." Note that these pans are the non-coated variety. They are sturdy and live up to the Chicago Metallic name. One of the two I received has a small dent in it and I have had this happen on one other occasion with Chicago Metallic Commercial pans that came in a set of two. I decided to keep the dented pan and it has not caused any difficulties in using it to bake cookies or roast vegetables or meats.
